The long anticipated re-opening of one of Solvang’s hippest restaurants Bacon and Brine, is said to open Monday August 22, after moving to a new location and having to completely remodel.

“I just want to cook again. I want to be a chef again and make delicious food,” said Crystal DeLongpré, aka Chef Pink, said in an interview with the SYV Star in June.

Set backs and delays in construction and permitting pushed back the opening which was supposed to happen in early June.

The restaurant is taking hyper-locally sourced food to the next level as owners Chef Pink and Courtney Rae DeLongpré now raise their own pigs that they will use every bit of for specially created menu items for their restaurant. They also harvested their own cattle and are now raising meat birds for their dishes.

Chef Pink said they will be using about two pigs per week, one steer per month and about 200 chickens a month for their menu which will change according to what is available.

The new Bacon and Brine will have 24 seats inside and 40 outside and will serve lunch and dinner. They hope to also offer deliveries in Solvang to start, and expand to delivering valley-wide since only pizza is available for delivery.

Chef Pink is known for her appearances on the Food Network and for guest chef appearances on the popular television show “Bar Rescue” on the Spike channel.

The new Bacon and Brine is now located at 1622 Copenhagen Drive next to the Sevtap wine tasting room at the blue windmill.
